Description

Ruckenspeck - Fatback - cured and smoked and used to bard or lard lean pieces of meat, but also used to prepare German pan fried potatoes. Cut the “Speck” to small cubes, put into the frying pan,fry till the cubes turn transparent and the fat is coming off. Now add onions and a bit later the boiled potatoes and seasoning.

Rückenspeck wird in der europäischen Küchevor allem als Zutat verwendet, z. B. zum Spicken und Umhüllen von mageremFleisch oder zur Herstellung von Schmalz, aber auch gewürfelt oder gemahlen inzahlreichen Würsten.

Speck wird auch sehr gern verwendet fuerBratkartoffeln mit Speck. Geschnitten zu kleinen Wuerfeln, dann anbraten bisdie Speckwuerfel glasig werden und das Fett auslaeuft.
